Sapori is located on Dundas West in Toronto, Canada. It is chef Ryan Sciara’s (formerly Archive, Oliver & Bonacinni, The Rom) vision for what a modern wine bar should be. Sapori focuses on internationally influenced comfort food with the belief of keeping things in house; from pickles, to mustards, to an extensive charcuterie program, which is available through a larder. Focusing on honest and natural leaning wines, the wine list also pays homage to the classics. There is no shortage of locally sourced and imported beers both on tap or in bottle. The bar offerings are rounded out with a creative and tight cocktail program. As a whole, the space, staff, and music are aiming to hit the same marks as the food; honest, unpretentious and comforting.

The brand was created to reflect these beliefs and was also brought into the space. The inspiration came from the notion of sharing crafted bites and wines with friends over conversation and keeping things simple and relaxed.
